A comforting and flavorful dish featuring tender chicken, sautéed peppers and onions, and melted provolone cheese, perfect for family dinners or casual gatherings.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 slices provolone cheese
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 1 tablespoon olive oil
  • 4 hoagie rolls
  • Salt and pepper to taste
  • Optional: hot sauce, for added spice, and additional toppings like pickles or jalapeños

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper. Cook them in the skillet for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  2. Add the sliced green and red bell peppers and onion to the same skillet. Sauté until softened, about 5-6 minutes. Stir occasionally to ensure even cooking.
  3. Return the sliced chicken to the skillet with the sautéed vegetables. Mix them well to combine the flavors.
  4. Place the provolone cheese slices over the chicken and vegetable mixture. Cover the skillet and let it cook for 2-3 minutes until the cheese melts.
  5. If desired, toast the hoagie rolls in a toaster or on a hot pan until lightly golden.
  6. Fill the toasted hoagie rolls with the chicken and pepper mixture. Serve warm and add hot sauce or any additional toppings you prefer.

Notes

Ensure chicken is cooked just until no longer pink to maintain moisture. Experiment with different cheeses and toppings to personalize your sandwich.
