A comforting and versatile broth made from a rotisserie chicken carcass, perfect for soups, stews, and sauces.

Ingredients

  • 1 rotisserie chicken carcass
  • 1 large carrot (cut in half, then into 3-inch lengths)
  • 2 celery ribs (cut in half, then into 3-inch lengths)
  • 1 tablespoon whole peppercorns
  • 1/2 teaspoon apple cider vinegar
  • 1 yellow onion (cut into fourths)
  • 1 garlic clove (peeled and smashed)
  • Water (enough to cover the ingredients)

Instructions

  1. Place the rotisserie chicken carcass into an 8-quart stock pot. Add the carrots, celery, whole peppercorns, apple cider vinegar, onion, and garlic.
  2. Fill the pot with enough water to cover at least half of the chicken carcass. Arrange the vegetables so they are submerged in the water.
  3. Cover the pot with a lid and bring the mixture to a hard boil. Once boiling, reduce the heat to a simmer.
  4. Allow the broth to simmer for about 90 minutes. Occasionally, turn the carcass and stir the vegetables.
  5. Turn off the heat and let the broth cool. Once cool enough to handle, strain the bones and vegetables using a colander placed over a large bowl.
  6. For a clearer broth, strain it again through a fine mesh strainer back into the stock pot.
  7. The broth is now ready to use or can be stored for later use.

Notes

For a richer flavor, consider adding herbs and adjusting seasoning to taste before serving.
