  • Salt and pepper to taste
  • 4 large potatoes, peeled and chopped
  • 4 tablespoons butter
  • 1/2 cup milk
  • 1 pound carrots, peeled and sliced
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the olive oil, minced garlic, dried herbs, salt, and pepper in a bowl.

  4. Place the marinated chicken in a baking dish and bake for 25–30 minutes, or until cooked through.
  5. Boil chopped potatoes in salted water until tender, about 15 minutes. Drain and return to pot.
  6. Mash the potatoes with butter and milk until smooth and creamy.
  7. In a skillet, melt 2 tablespoons of butter over medium heat. Add sliced carrots and brown sugar, stirring frequently.
