A delightful and quick carbonara pasta dish, combining crispy bacon and creamy sauce with al dente spaghetti for a comforting meal in just 25 minutes.

Ingredients

  • 250g spaghetti
  • 2 large eggs
  • 100ml heavy cream
  • 150g bacon, diced
  • 50g grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Bring salted water to a boil in a large pot. Cook the spaghetti according to package instructions until al dente. Reserve about half a cup of the pasta water, then drain and set aside.
  2. Cook the diced bacon in a large skillet over medium heat until crispy, about 5-7 minutes. Transfer the bacon to a plate, leaving the rendered fat in the pan.
  3. Add the minced garlic to the pan with the bacon fat. Sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Whisk together the eggs, heavy cream, and grated Parmesan cheese in a bowl until well combined. Set aside.
  5. Add the drained spaghetti back to the pan with the bacon and garlic. Remove from heat to prevent scrambling the eggs.
  6. Pour the egg mixture over the hot pasta, stirring continuously to create a creamy sauce. Adjust the sauce thickness with reserved pasta water if needed.
  7. Season with salt and pepper to taste, and serve immediately, garnished with chopped parsley.

Notes

Ensure to work quickly to get a creamy sauce and avoid scrambling the eggs. Use fresh ingredients for the best flavors.
