A classic Southern dish featuring tenderized steak, coated in a crispy batter and smothered in creamy gravy, perfect for family dinners.

Ingredients

  • 1 pound cubed steak
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon Cajun seasoning
  • 3/4 cup buttermilk
  • 1 large egg
  • Vegetable oil for frying
  • 1/4 cup flour (for gravy)
  • 2 cups milk (for gravy)
  • Salt and pepper to taste

Instructions

  1. Prepare the dredging mixture: In a shallow bowl, combine the flour, cornstarch, baking powder, and Cajun seasoning.
  2. Mix the wet ingredients: In another bowl, whisk together the buttermilk and egg until well combined.
  3. Dredge the steaks: Take each cubed steak and first dip it into the dry mixture, ensuring it’s fully coated. Then, dip it into the buttermilk mixture, followed by dredging it in the dry mixture again for an extra layer.
  4. Heat the oil: In a large skillet, pour in enough vegetable oil to cover the bottom, about 1/4 inch. Heat over medium heat until shimmering but not smoking.
  5. Fry the steaks: Carefully place the coated steaks in the hot oil. Fry each steak for about 2 minutes on each side, or until they turn a light golden brown. Remove them and set on a rack to drain excess oil.
  6. Make the gravy: Drain all but 3 tablespoons of the cooking oil from the skillet and return it to medium heat. Sprinkle in the 1/4 cup of flour, stirring constantly for about 3-5 minutes, until it turns a deep golden brown. Gradually whisk in the milk, bringing it to a simmer. Continue cooking for an additional 3-5 minutes or until the gravy thickens to your desired consistency. Season with salt and pepper to taste.

Notes

Ensure the oil temperature is just right and don’t skip the second dredging for extra crunch.
